A Low in fat, but high in flavour soup.

Red lentil soup, which is usually served hot, may be vegetarian. Red or green lentils may be used. Other ingredients may include vegetables such as carrots, potatoes, celery, parsley, and onion. Common added flavorings include garlic, cumin, lemon juice, olive oil, and vinegar. It is sometimes garnished with croutons or chopped herbs.Lentil soup is recognized as a highly nutritious, particularly good source of protein, dietary fiber, iron and potassium. The ingredients of the recipe given below is for 2 serving. The total calorie of this soup is 159 kcal, i.e. 80 kcal per serving.

Ingredients:
  • 1 1/2 tsp Olive Oil 
  • a small piece Ginger , peeled and grated
  • 1 tsp Cumin Seeds
  • A pinch Chilli Flakes
  • 1 Onion , finely chopped
  • 2 large Carrots , peeled and grated
  • 150g Red lentils
  • 1l vegetable stock fresh, cube or concentrate
  • 1 Lime , juiced to taste
  • a small bunch Coriander Leaves
  • Salt to taste

Method:

1.Heat 1 1/2 tsp olive oil in a large pan, add cumin seeds and fry the ginger and spices for a couple of minutes. Add the vegetables and cook for 5 minutes more then add the lentils and stock.
2.Bring to the boil and simmer for 15 minutes, stirring occasionally until the lentils are tender. Blend until smooth or leave chunky. Add Salt and red flakes according to taste.
3.Stir through a squeeze of lime juice and  sprinkled with coriander.
4.Serve hot.

Note:
  • If you don't want to use oil, you can it and put grounded cumin powder.
  • You can use Pressure cooker for it fast.
  • You can use any lentils.
  • you can add chopped spinach too.
